Dried Fruit and Nut Loaf

This dried fruit and nut loaf is especially nice to bake around Christmas as a light, nourishing & easy to digest snack when you have some visitors coming or as a present to give to neighbours and friends

Ingredients

  • 125 g honey

  • 4 eggs

  • 2 tablespoon Rum (optional)

  • 175g spelt-, or wheat-, or kamut, or rice flour

  • 1 heaped teaspoon baking powder

  • 2 teaspoons ground cinnamon

  • 175 g hazelnuts

  • 175 g figs

  • 125 g dates

  • 60 g lemon peel (organic, if possible)

  • 160 g raisins

  • 160 g sultanas

To decorate: A few halved almonds (peeled if you like)


Method

Whisk honey, eggs and rum until it’s frothy. Mix wholemeal flour with baking powder and cinnamon and add to honey/Rum-mix.

Half hazelnuts, coarsely chop figs and dates, cut lemon peel in small cubes. Add all with raisins and sultanas to dough.

Line tin (30cm) with baking parchment; Oil tin and paper; Fill in dough and decorate with almonds. Instead of one big tin you can use two small ones.

Bake for 1 hour by 160°C or until thoroughly cooked (test with skewer).

Tip: When cooled wrap in parchment paper and wait for a few days before you cut it. To serve cut in thin slices. If you like serve with butter.
