Sauerkraut Salad
This is a delicious salad based on Kate Wood’s “Eat Smart, Eat Raw”. Sauerkraut is fermented cabbage, a traditional German dish, full of enzymes and beneficial bacteria and wonderful for digestion.
Ingredients
200 g / 6oz Romanesco salad or salad of your choice or salad/spinach mix (thorn or cut)
1 avocado, diced
3 tomatoes, diced (or 1 carrot diced or grated in winter)
350 g / 8 oz sauerkraut
Seaweed flakes or piece of soaked alaria chopped finely
1 tbsp nutritional yeast flakes - optional
Dash of Braggs Liquid Amino’s or tamari sauce
Dash of sesame oil
Juice of half lemon
Dash honey or agave syrup or apple syrup or 1 apple grated
Handful of sprouts – optional
Method
Toss all ingredients together.
Serves 4
Note
Change ingredients related to the season. In winter time, add root vegetables like carrots instead of tomatoes.
Tip
You can also use spicy kimchi to make this salad.
