Bear Paws
It’s a lot of fun to make these biscuits, especially when children can help to make the imprints.
Ingredients:
220g spelt flour (or wheat flour)
70g almonds
100g honey or maple syrup
125g butter or vegan alternative
1 tbsp cocoa
1/4 tsp cinnamon
1 pinch of cloves - optional
1 pinch of sea salt
Baking tray lined with parchment paper
Method:
Grind almonds finely or use ground almonds.
Mix cocoa, cinnamon, cloves, if used and ground almonds with the spelt flour.
Add honey or maple syrup and butter or vegan alternative and knead quickly into a smooth dough or combine in the food processor. Cover and store in the fridge for 1 hour.
Preheat oven to 180˚C.
Form two 3cm thick dough rolls. Cut off small pieces with a knife and form balls.
Place the balls onto baking tray and imprint with a fork to make it look like bear paws.
Bake for 14 minutes at 180°C.
Store in airtight container.
Note: Spelt is a precursor to modern strains of wheat. It can often be enjoyed by people with wheat intolerance. Spelt is higher in protein, fats and fiber and lower in gluten than wheat. It contains special carbohydrates, which stimulate the body’s immune system and increase its resistance to infection. Spelt is more easily digested and has a warming quality compared to wheat, which is cooling to the body. Often the best tasting breads, cakes and cookies are made with spelt.
