Pickled Onions and Pickled Cucumbers
Pickled onions and cucumbers are very nice on a burger or in a wrap or as an addition to any salad.. You can make them in advance and store in a glass jar in the fridge.
Pickled Onions
500g white onions
1. Slice onions very finely (best on a good mandolin) and steep at least for one hour or overnight in cold water.
2. Squeeze out all the juice of the onions and set aside.
Marinade
· 75 ml extra virgin olive oil or oil of your choice
· 75 ml apple cider vinegar or lemon juice
· 2-4 tsp honey or agave syrup
· ½ - 1 tsp curry powder
1. Blend marinade, pour over onions and mix well.
2. Allow the onions to marinate for a few hours.
3. It will keep for two weeks or longer in a jar in the fridge.
Pickled Cucumber
1 cucumber
Marinade
· 75 ml filtered water
· 75 ml/ apple cider vinegar or lemon juice
· 40 ml honey or agave syrup
1. Peel cucumbers and cut into very thin slices (use a mandolin if possible).
2. Blend marinade, pour over cucumber and mix well.
3. Allow to marinate for a few hours.
4. It will keep for two weeks in a jar in the fridge.
Note – Double the recipes if you are expecting a big crowd!
