Kombucha Mayonaise

Not only is it easy to make mayonnaise from scratch whenever you need it. You can also make your own probiotic mayonnaise by adding home-made Kombucha! This recipe is based on Donna Schwenk’s recipe from “Cultured Food for Life”

Ingredients

  • ¼ cup of basic Kombucha

  • 2 large organic egg yolks

  • 1/2 tsp mustard powder

  • 1 big crushed clove of garlic

  • 1/2 tsp onion powder

  • 1/2 tsp Sea salt

  • 1 cup extra virgin olive oil (start with ½ to ¾ cup % add more if needed)

  • Lemon juice to taste


Method

  1. Place all ingredients except the olive oil and lemon juice in a food processor and pulse until mixed.

  2. With the food processor running pour the olive oil through the feed tube and process for 5 minutes until the mixture thickens.

  3. Add lemon juice to taste.

Note: This mayonnaise can be stored in a sealed airtight container in the fridge for up to three month.
