Spicy Apple Chutney
This chutney has a sweet and spicy flavour and is perfect with Indian style curries, cheeses and roasted vegetables
Makes 4-6 jars
Ingredients
250g onions, chopped
1kg apples, peeled, cored and chopped
100g sultanas or raisins
2 tsp grated ginger
1 Chili, finely chopped
2 tsp ground coriander
2 tsp sweet paprika
2 tsp mixed spice
2 tsp sea salt or Himalayan salt
300g brown sugar
400ml cider vinegar
Method
Put all the ingredients into a pot. Slowly bring to the boil until the sugar has dissolved.
Simmer for at least 2 hours, stirring from time to time to stop the chutney sticking to the pan.
When it is very thick and you can draw a wooden spoon across the base of the pan so that it leaves a channel behind it that does not immediately fill with liquid, the chutney is ready.
Fill into warm, sterilised jars, seal and cool.
Store in a cool, dark place for one months before eating.
