Spicy Cauliflower Florets
Cauliflower is high in fiber, a low carb food and contains vitamins B and C. It also contains high concentrations of carotenoids (antioxidants) and glucosinolates. Cauliflower is also used for pizza crusts, as a mash or as a rice replacement.
Ingredients for the cauliflower spiced oil:
4-5 tbsp extra-virgin olive oil
1tsp ground cumin
1tsp ground coriander
1 tsp turmeric powder
1 tsp medium hot curry powder
1 tsp yellow, brown or black mustard seeds (see note)
1 garlic clove, crushed or 1tsp garlic granules or flakes
½ tsp sea salt or Himalayan salt
½ tsp black or white pepper, freshly ground
¼ tsp cayenne pepper - optional
½ tsp vegetable stock powder
1 tsp brown sugar or honey or maple or agave or apple syrup
For 1 head cauliflower, (cut into bite sized florets and chop the core into small cubes)
Method
1. Heat the oven at 200˚C
2. Make the spiced oil by mixing all the above ingredients together.
3. Add the cauliflower florets and cubes and mix thoroughly.
4. Line a baking tray with parchment paper.
5. Place the coated cauliflower florets and cubes in a single layer on baking tray.
6. Bake for 20-25 minutes and turn halfway through.
Note - Yellow mustard seeds (also called white) are the mildest, while brown and black seeds much hotter and more pungent.
